4 cloves garlic, chopped
1 inch ginger, peeled, chopped large chunks
1 onion, chopped
1/2 t. Hawaiian salt
1-3 packets longrice (vermicelli/bean thread)
Brown chicken in oil with ginger chunks. Add garlic and onion, cook till onions are tender. Meanwhile, in a large bowl add longrice to warm (not hot) water. Do Not Cook Longrice. Allow to sit on counter, mixing gently with your fingers to break up the threads. Continue to cook chicken. Add salt and shoyu to taste. Add water to consistency desired. Some like it soupy, others prefer it drier. After chicken is cooked through, remove chicken from heat. Correct seasoning if needed (shoyu, salt, etc). Remove ginger chunks. Before serving, gently stir in longrice. Serve immediately!
