4c. cooked red rice (like Lotus Foods brand Bhutanese Red Rice)
1 medium ripe mango, peeled and finely chopped
1/2c. thinly sliced Chinese (Napa) cabbage
1 package (4-6oz.) baked tofu (ginger or teriyaki flavor)
1/2c. onion, diced
1 red pepper, seeded and diced
1/2c. fresh parsley, finely chopped

Honey-Ginger Dressing
1/4c. canola oil
3T. lemon juice
2T. shoyu
3T. apple cider vinegar
2T. honey
1t. chopped garlic
1t. grated ginger
1t. lemon zest
salt and pepper to taste

Cook rice according to package, fluff, and refrigerate till chilled. 

In a small bowl, prepare dressing.  Combine oil, lemon juice, shoyu, vinegar, honey, garlic, ginger, and lemon zest.  Rice and dressing may be prepared the day before and refrigerated for convenience. 

In a large bowl, prepare remaining salad ingredients.  Add chopped mango, tofu (chopped into small pieces), onion, red pepper, cabbage, and parsley.  Fold in rice and toss gently to mix ingredients.  Add the Honey-Ginger dressing and toss to coat salad ingredients.  Salt and pepper to taste.  Serve immediately.
